Small Bite Night - Buffalo Chicken Sliders

Small  bite night has come and gone once again.  This time around, it we did sliders, Buffalo Chicken Sliders and a meatball slider.  Both delicious in their own way, but the buffalo chicken slider was hands down my favorite and Rigby's too.  I started by heavily seasoning two boneless, skinless chicken breasts with salt and pepper and then cooked them until they were done.  After a brief rest period, the chicken is shredded and then mixed with sour cream and hot sauce.  I started out with and 1/8 of a cup of hot sauce and added about another half of an 1/8 cup of hot sauce. 

I'm telling you, these taste like buffalo wings, only in slider form.  The slider is topped with some thinly sliced celery and the blue cheese is mixed into the sour cream and hot sauce.  They're pretty darn tasty.

Buffalo Chicken Sliders

  • 2 boneless, skinless chicken breasts
  • salt and pepper
  • olive oil
  • 1/8 to 1/4 cup hot sauce (add based on taste preference)
  • 1/4 cup sour cream
  • 2 stalks celery, thinly sliced
  • 1/4 cup blue cheese (use more or less based on taste preference)
Season chicken breasts with salt and pepper.  Heat the olive oil in a medium size skillet over medium high heat.  Add chicken breast and cook until chicken is done.  Remove chicken from skillet and allow to rest for 10 minutes.  Once chicken has rested, shred chicken with two forks.  Add chicken to a mixing bowl.

Add hot sauce and sour cream to chicken and mix well.  Add more sour cream or hot sauce, based on taste preference.  Stir in blue cheese.  Serve on buns topped with thinly sliced celery.
