As Rigby and I were driving to the store to get all the ingredients for small bite night, I looked at her and said I know the perfect dessert. Chocolate covered strawberries. She agreed whole heartily. She loves them and they are so easy to make and look so elegant when done.
I tasked Rigs with picking out the strawberries and she selected smaller ones. For the dipping chocolate, I used a darker chocolate (60% cacao) but use what you like. I just so happen to have some white chocolate left over from when I made the Vanilla Bean Cheesecake, so I melted that and drizzled it over the dark chocolate for decoration.
Chocolate Covered Strawberries
- 4 ounces melted chocolate
- 12 strawberries
- 1 ounce white chocolate, melted
Wash and dry the strawberries. I left the tops on, just so I had something to hang on to when dipping them.
Once berries are dry, dip berries into chocolate, and place on prepared baking sheet. Place berries in refrigerator until chocolate has set. Once chocolate is set, drizzle white chocolate over the berries. Serve once chocolate has set completely.
