Cranberry Almond Hot Cereal Mix

Last week while looking for a cook book for dinner inspiration, I stumbled on this recipe for a hot cereal mix.  After reading the recipe through, I realized I actually had everything in the house to make it!  So off to the kitchen I went, mixed up the cereal and then made a test batch to eat, yum  And packed with a TON of whole grains.  I tried to get Rigby to try it, goes without saying, Rigby no like.  To save time, we tried making it in the crock pot overnight for breakfast, ick.  It turned into a mushy mess that was promptly fed to the garbage disposal and a new batch was made on the stove top.  I haven't tried to microwave it yet, maybe tomorrow. 

Here's what you need:
1 cup quick cooking oats
1 cup barley
1 cup wheat berries.  (The recipe actually called for Bulgar wheat or cracked wheat, but I had wheat berries and decided to go with that.)
3/4 cup toasted chopped almonds
1/3 cup sugar
1 Tablespoon Cinnamon(adjust according to your tastes or leave out completely)
1/2 teaspoon salt
1 cup dried cranberries.

Combine ingredients in an airtight container and mix well.

To make the cereal, combine 2/3 cup of cereal mix and 1 1/3 cup of water.  Bring to boil on stove top and reduce to simmer for 12 - 15 minutes.  Serve warm, add milk if desired.  Believe me, this is enough for 2 people.
